 Green pea and mint soup with roasted plantin, sweet potato and carrot:
Fry an onion and a bit of garlic in olive oil. Add peas, stock and fresh mint.
Mix in blender til creamy. But in a spoon of thick yogurt, salt an pepper.  Bring to the boil.

Chop plantin, sweet potato and carrot in to bits. Roast on a trey with olive oil in oven, 200 C.
Mix olive oil, zest and juice from a lemon, chili, garlic and salt. Pour over the roasted veg.
Serve the soup with olive oil and fresh mint on top.
